  • 1.2 kg / 2.4 lb pumpkin (any type) or butternut squash (unpeeled weight)
  • 1 onion, sliced (white, brown, yellow)
  • 2 garlic cloves, peeled whole
  • 750 ml vegetable or chicken broth/stock, low sodium
  • 250 ml water
  • Salt and pepper to taste
  • 125 - 180ml cream, half and half or full-cream milk

 

How to Make Pumpkin Soup

  1. Prep the Pumpkin: Slice the pumpkin into 3cm (2.25") sections. Remove the skin, scrape out the seeds, and cut the flesh into 4cm (1.5") uniform chunks.
  2. Optional Roast for Depth: Toss your chunks in a little olive oil, then place them in the oven at 200°C for 15 minutes, until the edges are golden and caramelised.
  3. Combine and Simmer: Place the pumpkin chunks, onion, garlic, broth, and water into your SMEG casserole pot. Don't worry if the liquid doesn't completely submerge the pumpkin; this lower water ratio is ideal for achieving a more concentrated, rich flavour profile. Bring the mixture to a boil on an induction hob or gas hob, then reduce the heat to a rapid simmer for approximately 10 minutes, or until the pumpkin is tender enough to be pierced easily with a butter knife.
